- 5-6 cups Mesclun Salad Mix
- ½ cup Roasted Pumpkin Seeds
- 1 large apple chopped Green Apple
- 1 medium Cucumber, chopped
- ½ cup Dried Cranberries
- 2-3 stalks (about ½ cup) Celery Stalks, finely chopped
- ½ cup Olives (use green or black olives, pitted and halved)
Instructions:
- In a large salad bowl, combine the mesclun salad mix, roasted pecans or pumpkin seeds, chopped green apple, cucumber, dried cranberries, celery, and olives.
- Toss gently to combine.
Simple Olive Oil & Lemon Dressing:
- Extra Virgin Olive Oil: ¼ cup
- Fresh Lemon Juice: 2 tablespoons (about 1 medium lemon)
- Sea Salt: ½ teaspoon (adjust to taste)
- Black Pepper: ¼ teaspoon (adjust to taste)
Dressing Instructions:
- In a small bowl or jar, whisk together the olive oil, lemon juice, salt, and pepper until well combined.
- Drizzle the dressing over the salad just before serving, and toss to coat.
